it was time to use the collards from my csa. i couldn't find a single recipe i liked so i made one up:
this? is heaven on earth. golden manna from above. it's cashew butter made from freshly roasted cashews that i roasted in the oven. so. f-ing. good.
if you've never had homemade cashew butter i recommend you find some raw cashews somewhere, roast them in the oven at 425 degrees until golden, let cool, put in a really good blender or cuisinart (this task will destroy a wal-mart blender that comes in at any price point so if you have a wal-mart blender? don't try it. ask me how i know!) and whir until it's a paste. you will definitely have to add some oil. cashews and almonds aren't really oily enough to make a nice butter on their own so you have to help them out with a smidge of added oil. i use grapeseed oil because it is almost totally neutral in taste and is really freaking good for you. and don't forget to salt it. i use my rabidly expensive fleur de sel to salt my nut butters. it is totally worth the price for the fleur de sel for this purpose alone.
about 1.5 pounds of raw cashews made that much cashew butter in a quart ball jar.

last weekend i wanted muffins. vegan, tasty, healthy muffins. i tried to find a recipe i liked and i didn't. so i decided to make up my own. the first batch was awesome. the second batch was very awesome. this is the third batch:
these, by the way, have little flecks of fresh diced banana, dates, dried cranberries, currants and a teensy bit of pecans. they're super tender, even though they're made with whole wheat flour. i'm so proud that i made it up me ownself! i can't stop braggin'!
